@christopherhopkins1: Garlic Butter Shrimp Linguine with Tomato Pomodoro Sauce Ingredients: 1¼ pounds large shrimp, peeled and deveined 12 ounces linguine pasta 1 tablespoon olive oil 4 tablespoons unsalted butter, divided 5 garlic cloves, minced 1 teaspoon Italian seasoning ½ teaspoon freshly cracked black pepper ½ teaspoon kosher salt, plus more for pasta water 1 can (28 ounces) crushed tomatoes 2 tablespoons tomato paste ½ to 1 cup reserved pasta water, as needed ¼ cup chopped fresh basil Directions: 1. Bring a large pot of well-salted water to a boil. Cook the linguine pasta until just al dente, following the package timing. Reserve 1 cup of pasta water, then drain. 2. Pat the shrimp dry and season with Italian seasoning, salt, and pepper. Heat the olive oil and 1 tablespoon butter over medium-high heat. Cook the shrimp for 1–2 minutes per side, just until opaque and curled, then transfer immediately to a plate. 3. Lower the heat, add another tablespoon butter and half the garlic, and stir for 30 seconds without browning the garlic. 4. Add the remaining garlic and tomato paste and cook for 1 minute. Stir in the crushed tomatoes and Italian herbs or basil. Simmer for 8–10 minutes. 5. Toss the linguine pasta through the sauce until it is clinging to every loosely overlapping strand, adding small splashes of pasta water only if needed. Arrange a generous pasta portion beside the rested shrimp; spoon the seasoned pan juices over the protein and finish both portions with the listed herbs.
