@christopherhopkins1: Brown Sugar Garlic Roast Beef Ingredients: 3 pounds boneless beef chuck roast 1 tablespoon olive oil 1½ teaspoons kosher salt 1 teaspoon cracked black pepper 1 teaspoon smoked paprika 6 garlic cloves, minced 1 large yellow onion, sliced 1½ cups low-sodium beef broth 2 tablespoons Worcestershire sauce ⅓ cup packed brown sugar 2 tablespoons Dijon mustard 1 teaspoon dried thyme 2 tablespoons chopped parsley Directions: 1. Heat the oven to 325°F. Pat the roast very dry and season it all over with salt, pepper, paprika, and thyme. 2. Heat the olive oil in a Dutch oven over medium-high heat. Sear the roast on every side until a deep brown crust forms, then transfer it briefly to a plate. 3. Add the onion and cook until lightly browned. Stir in the garlic, Worcestershire, broth, brown sugar, and Dijon, scraping up the browned bits. 4. Return the roast to the pot, cover, and braise for 2–2½ hours, until fork-tender. Turn it once halfway through and add a splash of broth if the pot becomes dry. 5. Transfer the roast to a board and rest for 15 minutes. Simmer the uncovered pan juices for 5–8 minutes until glossy and slightly reduced. 6. Slice or pull the roast across the grain. Spoon the garlic pan sauce over the meat and finish with parsley. Prep Time: 20 minutes Cook Time: About 3 hours, until fork-tender Total Time: About 3 hours 35 minutes, including resting Servings: 8
