I would cook it more like a skin on pork belly, heavily salt, the skin and smoke it skin side up.then three quarters of the way through take the salt off and put it skin side down. or foil boat it and stick it in the oven.So the skin can crisp

My dad would start at 6:30 cook it until 4:30 then he would move it into the oven at a lower temp to keep it proper temp

I injected half a turkey with jalapeño butter thinking I would be the only one who eat it then smoked it and one other everyone was like spicy? And then tried a small pinch, long story short I was the only one who didn’t get any of th jalapeño butter turkey
