@amanda__.please: MUM’S TIRAMISU ☕️ My mum has been making this tiramisu for years and it's honestly the best! Creamy, rich and even better after a day or two in the fridge. Ingredients: 1½ cups strong brewed coffee, cooled 6 egg yolks 1 cup caster sugar 1⅓ cups thickened cream 1¼ cups mascarpone 1 shot coffee liqueur (optional) 400g packet ladyfinger biscuits Cocoa powder, for dusting Method: Brew your coffee (I used Nespresso pods), pour into a bowl and leave to cool. Add egg yolks and sugar to a metal bowl. Sit over a saucepan of simmering water, making sure the bowl doesn't touch the water. Whisk constantly for 5 minutes until pale, thin and runny. Transfer to your stand mixer and whisk until thick, pale and fluffy. (This also helps pasteurise the egg yolks). In a separate bowl, whip cream to stiff peaks. Add mascarpone to your egg mixture and mix to combine. Gently fold the mascarpone mixture through the whipped cream. Add coffee liqueur to your cooled coffee, if using. Spread a little cream mixture over the bottom of a 30cm x 24cm tray. Quickly dip ladyfingers into the coffee (don't let them soak) and arrange in a layer. Spread over a generous layer of cream and repeat, just like a lasagne. Finish with the remaining cream. Cover and refrigerate overnight, ideally 24–48 hours. Dust generously with cocoa powder before serving. I used the entire 400g packet of ladyfingers. The longer this sits, the better it gets! #tiramisu #christmasdessert #nobakerecipe

When you added the mascarpone to the egg mixture was the mascarpone at room temperature? Also had the egg mixture cooled down from the whipping? I just am scared my batter will split

I can recommend putting the cacao powder over it before it goes into the fridge. The powder will soak up the moisture from the Creme and become very chocolatie.
