In South Africa, cooked food in supermarkets is governed by Regulation R638 of 22 June 2018, under the Foodstuffs, Cosmetics and Disinfectants Act (Act 54 of 1972).
Section 8 (Handling of Foodstuffs) and Section 9 (Temperature Control) regulate cooked food handling and timelines. Under these sections, hot cooked food must be kept above 60°C and displayed for a maximum of 4 hours, or chilled to below 5°C within 3 to 4 hours.
At the end of a shift, any hot food that has been displayed for more than 4 hours, or food that has dropped into the temperature danger zone (8°C to 60°C), cannot be sold or given to the public and must be discarded as waste.

time control and temperature control under HACCP by law food that has been under time Control which is normally 4hours must be discarded not everything is that simple , you can kill someone serving them out of temperature food and out of time control some bacteria and pathogens multiply , remember heating element don't work the same it's all about food safety guys, I onced asked this and my husband made me understand he is a travelling Chef on cruises..
