Here’s what you need and how to make it: For the pork: 1½ lbs (680 g) boneless pork shoulder or pork loin, cut into bite-sized cubes ½ cup (65 g) cornflour (cornstarch) ¼ cup (30 g) plain flour 1 large egg ½ tsp garlic powder ½ tsp paprika ½ tsp salt ¼ tsp black pepper ½ cup (120 ml) cold water Vegetable oil, for frying For the sweet and sour sauce: ½ cup (120 ml) pineapple juice ¼ cup (60 ml) rice vinegar ⅓ cup (65 g) brown sugar ¼ cup (60 ml) tomato ketchup 2 tbsp soy sauce 1 tbsp cornflour mixed with 2 tbsp cold water 1 tsp freshly grated ginger 2 cloves garlic, minced Optional garnish: 2 tbsp chopped spring onions 1 tbsp sesame seeds Pineapple chunks Directions: 1. Pat the pork dry and combine cornflour, plain flour, garlic powder, paprika, salt, and black pepper in a bowl. 2. Add egg and cold water, whisking into a smooth batter. Toss the pork in the batter. 3. Heat oil to 350°F (175°C). Fry pork in batches for 5–7 minutes until golden brown. For extra crispiness, fry a second time for 1–2 minutes. 4. Simmer until sugar dissolves. 6. Stir cornflour with cold water, then slowly pour into the simmering sauce, stirring until thick and glossy. 7. Toss the crispy pork with the sauce until coated. 8. Garnish with spring onions, sesame seeds, and pineapple chunks if you like. Serve immediately with steamed rice or noodles. Prep time is 20 minutes, cooking time 25 minutes, totaling 45 minutes. Each serving is about 485 kcal, and it makes 4 servings. It’s a great dish for a homemade meal! #HomemadeCooking #PorkBites #SweetAndSour
