Melt 15 g butter in a pan. Add the sliced onion, brown sugar and salt. Cook over medium-low heat for 15–20 minutes until soft and golden. Stir in the balsamic vinegar and cook for another minute. 2. Mix the softened butter with garlic, parsley and salt. Spread over the cut sides of the brioche buns and toast in a pan until golden and crispy. 3. Mix the mayonnaise, Dijon mustard, chopped pickles, pickle juice and black pepper until combined. 4. Divide the ground beef into 4 equal balls. Heat a lightly oiled skillet over medium-high heat. Add the beef and immediately smash into thin patties. Season with salt and pepper. 5. Cook for 2–3 minutes until deeply browned, then flip. Add a slice of cheddar to each patty and cook for another 1–2 minutes, until the cheese melts and the beef is cooked through. 6. Spread the creamy pickle sauce onto the toasted buns. Stack two cheesy patties on each, add the balsamic caramelized onions and close the burgers. 7. Serve immediately while the buns are crispy and the cheese is melted.
