🎃🥞 Pumpkin Ricotta Baby Pancakes 🥞🎃 Soft, fluffy and perfect for baby-led weaning! 👶💛 🛒 Ingredients 🧈 6 tbsp (84 g) unsalted butter 🥚 3 large eggs 🥛 1½ cups (360 ml) whole milk 🎃 ½ cup (120 ml) pumpkin purée 🧀 ½ cup (120 ml) fresh ricotta 🌿 1 tsp (5 ml) vanilla extract 🌾 1 cup (240 ml) all-purpose flour 🌽 ½ cup (120 ml) corn flour ✨ 2 tsp (10 ml) baking powder 🍂 ¼ tsp ground cinnamon (optional) 👩‍🍳 Directions (30 min) 1️⃣ Melt 4 tbsp butter 🧈 and let it cool a minute. Whisk with the eggs, milk, pumpkin, ricotta and vanilla until mostly smooth. 🥣 2️⃣ In a larger bowl, stir together the flours, baking powder and cinnamon. Add the pumpkin mixture and whisk just until combined. A few lumps are fine! 👌 3️⃣ Melt the remaining 2 tbsp butter in a large skillet over medium heat 🔥. Spoon in about 2 tbsp batter per pancake and spread into small rounds. Don’t crowd the pan! 🍳 4️⃣ Cook about 3 minutes until golden, then flip and brown the other side. 🥞 Move to a plate and repeat with the rest of the batter. 5️⃣ Serve plain or with a simple side topping, like ricotta stirred with smooth nut butter. 🥜🧀 👶 Serving to baby 🤲 Offer one pancake and let baby self-feed. If they need help, hold it out to grasp, then let go once they have a secure hold. ✂️ If a pancake is bigger than 2 inches (5 cm), slice it into strips about the width of two adult fingers.
