Cajun Shrimp and Beef Sausage Rice Skillet Ingredients: 1 lb (450 g) large shrimp, peeled and deveined, tails on 12 oz (340 g) smoked beef sausage, sliced into rounds 1 1/2 cups uncooked long-grain rice 3 cups chicken or vegetable broth 1 tbsp olive oil 3 tbsp butter, divided 4 garlic cloves, minced 1 small onion, finely diced 1/2 red bell pepper, finely diced 2 tsp Cajun seasoning, divided 1 tsp smoked paprika 1/2 tsp turmeric Salt and black pepper, to taste 2 tbsp fresh parsley, chopped Directions: Step 1: Prepare the shrimp by peeling and deveining them, leaving the tails attached if desired. Pat dry with paper towels to remove excess moisture. Step 2: Slice the smoked beef sausage into evenly sized rounds. Finely dice the onion and red bell pepper, mince the garlic, and chop the fresh parsley. Step 3: Place the shrimp in a medium bowl. Sprinkle with 1 teaspoon of Cajun seasoning and toss gently until evenly coated. Set aside. Step 4: Heat the olive oil in a large, deep skillet with a fitted lid over medium-high heat. Step 5: Add the sliced smoked beef sausage in a single layer. Cook for 2 to 3 minutes per side until browned and slightly crispy around the edges. Step 6: Transfer the browned sausage to a plate, leaving the flavorful drippings in the skillet. Step 7: Reduce the heat slightly and add 1 tablespoon of butter to the same skillet. Allow it to melt completely. Step 8: Arrange the seasoned shrimp in a single layer and sear for 1 to 2 minutes per side until pink and opaque. Transfer to the plate with the sausage. Step 9: Add another tablespoon of butter to the skillet and melt over medium heat. Step 10: Add the finely diced onion and red bell pepper. Cook for approximately 3 minutes, stirring occasionally, until the vegetables begin to soften. Step 11: Stir in the minced garlic and cook for another 30 seconds until fragrant, being careful not to burn it. Step 12: Add the uncooked long-grain rice directly to the skillet. Step 13: Sprinkle in the remaining 1 teaspoon of Cajun seasoning, smoked paprika, and turmeric. Stir thoroughly to coat the rice with the seasoned butter and vegetables. Step 14: Toast the rice for approximately 1 minute, stirring gently to enhance its flavor. Step 15: Pour in the chicken or vegetable broth and stir once to distribute the rice evenly. Add a little salt and black pepper if needed. Step 16: Increase the heat and bring the mixture to a gentle boil. Step 17: Reduce the heat to low, cover the skillet tightly with a lid, and simmer for approximately 18 minutes until the rice is tender and the liquid has been absorbed. Step 18: Avoid lifting the lid during cooking to keep the steam trapped and help the rice cook evenly. Step 19: Remove the skillet from the heat and allow the rice to rest, covered, for approximately 5 minutes. Step 20: Remove the lid and gently fluff the cooked rice with a fork to separate the grains. Step 21: Add the remaining tablespoon of butter and stir gently until melted and evenly distributed. Step 22: Return the browned smoked beef sausage and cooked shrimp to the skillet. Step 23: Toss gently to combine with the seasoned rice. Cover and warm over low heat for 1 to 2 minutes until everything is heated through. Step 24: Taste and adjust the Cajun seasoning, salt, or black pepper if necessary. Step 25: Sprinkle freshly chopped parsley over the skillet and serve hot.
