EASY ONE-POT CHILI This is my go-to chili when we’re craving a cozy dinner. It’s hearty, has a little kick, and comes together in one pot. 🌶️
Makes about 5–6 servings Ingredients •	1 tablespoon olive oil •	½ medium onion, diced •	½ green bell pepper, diced •	1 small jalapeño, seeds and ribs removed, finely diced •	2 cloves garlic, minced •	1 pound ground beef •	2 tablespoons chili powder •	1 teaspoon ground cumin •	1 teaspoon smoked paprika •	1 teaspoon dried oregano •	1 teaspoon kosher salt •	½ teaspoon black pepper •	3 tablespoons tomato paste •	1 can (14.5 oz) diced tomatoes, undrained •	2 cups beef broth •	1 tablespoon Worcestershire sauce •	1 can (15 oz) pinto beans, drained and rinsed (1 can per pound of beef) •	1–2 bay leaves, depending on size (1 large or 2 small) Instructions 1. Heat the olive oil in a large pot over medium heat. 2. Add the onion, green bell pepper, and jalapeño. Cook for 3–5 minutes, stirring occasionally, until softened. 3. Add the garlic and cook for 30–60 seconds, until fragrant. 4. Add the ground beef and cook for 8–10 minutes, breaking it apart as it browns. Drain any excess grease if needed. 5. Add the chili powder, cumin, smoked paprika, oregano, kosher salt, and black pepper. Cook for 30–60 seconds, stirring constantly, until fragrant. 6. Stir in the tomato paste and cook for 1–2 minutes. 7. Add the diced tomatoes with their juices, beef broth, Worcestershire sauce, pinto beans, and bay leaf or leaves. Stir well, scraping up any browned bits from the bottom of the pot. 8. Bring to a gentle simmer, then reduce the heat to low. Simmer partially covered for about 1 hour, stirring occasionally. 9. Remove and discard the bay leaf. 10. For thicker chili, simmer uncovered for a few more minutes. If it’s too thick, stir in a splash of beef broth. 11. Taste and adjust the salt and seasonings before serving. What’s the one topping your bowl of chili has to have? 👇 #easydinner #easydinnerideas #soupseason #chilirecipe #onepotmeals
