Step-by-Step Instructions
Marinate the chicken. Add the chicken, yogurt, lemon juice, ginger-garlic paste, garam masala, cumin, paprika, turmeric, chili powder, and salt to a bowl. Stir until the chicken is thoroughly coated. Cover and refrigerate for at least 30 minutes or up to 8 hours.
Rinse and soak the rice. Rinse the basmati rice under cool water several times until the water is mostly clear. Cover with fresh water and soak for 20–30 minutes. Drain well.
Prepare the saffron milk. Stir the saffron into the warm milk and let it steep while you prepare the biryani. If you're skipping the saffron, simply use the warm milk.
Brown the onions. Heat the ghee or oil in a large oven-safe Dutch oven over medium heat. Add the sliced onions and cook for 12–15 minutes, stirring frequently, until deeply golden. Remove about one-third of the onions and reserve them for layering.
Cook the chicken. Add the marinated chicken to the remaining onions. Cook over medium-high heat for about 5 minutes, stirring occasionally. Add the tomatoes and optional green chili. Cook another 5–7 minutes, until the tomatoes soften and the chicken is partially cooked. Remove from the heat.
Par-cook the rice. Meanwhile, bring a large pot of water to a boil. Add 1 tablespoon salt, bay leaves, cardamom, cloves, and cinnamon. Add the drained rice and boil for about 5–6 minutes. The grains should be flexible but still noticeably firm in the center—about 70% cooked. Drain immediately.
Heat the oven. Preheat the oven to 350°F (175°C).
Build the biryani. Spread the chicken mixture evenly across the bottom of the Dutch oven. Sprinkle with half of the cilantro and mint. Gently spread the par-cooked rice over the chicken without stirring the layers together.
Finish the layers. Scatter the reserved browned onions and remaining cilantro and mint over the rice. Drizzle with the saffron milk and melted ghee.
Seal and bake. Cover the Dutch oven tightly with its lid. Bake for 25–30 minutes, or until the rice is tender and the chicken reaches a safe internal temperature of 165°F (74°C).
Rest the biryani. Remove it from the oven and leave it covered for 10 minutes. This little nap matters—the trapped steam finish
