Pork chop Puttanesca   Serves dos people Ingredients 1 pork chop 1 shallot 2 cloves of garlic Half a lemon Handful of olives 2 tbsp capers LOTS OF OLIVE OIL 1 tin of whole tomatoes 2 anchovies and some oil 1 green chilli Pasta of your choice   Method 1.        Start by slicing your pork chop into thick chunks and place into a pan on a low heat to render out the fat. 2.        Finely chop your shallot and garlic and roughly chop your olives and chilli. 3.        Once your pork has rendered remove from the pan and put your pasta on to boil with a big pinch of salt.  and 4.        Turn the heat up to medium and add your chopped ingredients along with a few anchovies to the porky pan stirring regularly until softened. 5.        Pour in your whole tomatoes and crush gently with the back of a spoon until a sauce forms. 6.        Add splash of balsamic vinegar and the juice and zest of half a lemon. Stir through before adding in your pasta with a spoonful of that pasta water. 7.        Let it cook for another two minutes before serving with some grated parmesan or pecerino.
