Meat in Berry Sauce 🍓🫐 | Meals from Valhalla Ep. 2 In the viking age, the forest was an avid resource as well as a definite border for the townsfolk. It was a place where berries and wild game were gathered by the ruling class or talented woodmen of the tribe. This is a homage and also a more domesticated version of the meal and classic pairing that can be found back in those days, a balanced meal using berries as a natural sweetener. Disclaimer: While the content is inspired by real research from medieval times, the video incorporates elements of medieval faction and fiction for the purposes of entertainment. Researchers: - Main: Vince Carino - Assistant: Igi Gomez Resources: - Miller, M. (2022). Viking pork with berry sauce. Tasting History. Retrieved July 6, 2025, from https://www.tastinghistory.com/recipes/vikingberrysauce - Gustavsson, D., & Bergström, D. (2013). An early meal: A Viking age cookbook & culinary odyssey. Chronocopia Publishing. - Hrafnir Fiachsman, H. L. (Cauldwell, P.). (2007, January). Viking cooking: A theoretical reconstruction from the archaeological and written record. 12th Night. INGREDIENTS: ⁃	1 lb pork tenderloin ⁃	Salt ⁃	Lard, oil, or duck fat for searing ⁃	1 bunch of chopped leeks ⁃	2 teaspoons brown mustard seeds, roughly crushed ⁃	Fresh berries, whatever is available ⁃	1 teaspoon chopped mint ⁃	1 cup of mead INSTRUCTIONS: ⁃	Season the pork well, then sear on all sides with a bit of lard, oil, or duck fat until golden. ⁃	Remove the pork from the pot then add leeks and saute until softened. Add mead to deglaze. ⁃	Slice whichever berries you have available (here we’re using strawberries, cherries, blackberries, lingonberries). Place in broth, along with minced mint leaves, mustard seeds, and pepper. ⁃	Place back the pork and allow it to cook fully for around 30 minutes. Remove the pork and using an immersion blender, blend the remainder of the ingredients in the pot until it becomes thick and silky. ⁃	Slice the pork and serve along with berries and the sauce and enjoy! #viking #vikingfood #medieval #fantasy
