@lilydavyy: The only loaded potato soup recipe you need! So flavorful, thick, and the toppings MAKE this soup!! In a pot, melt 1 tbs butter with 1 tsp oil. Add your diced onion, let soften. Add your seasonings: 2 tsp of the following, chicken bouillon, salt, paprika, garlic powder. Add in 2 tsp fresh garlic. Mix, then add 3 cups chicken broth, 1 cup water, 1 cup heavy cream. Add in 3-4 diced potatoes. Take out 2 cups of your soup, whisk in 4 tbs cornstarch then return the slurry back to the soup. Let boil, and potatoes cook. Then mash potatoes lightly in pot. Add in about 4 cups shredded cheese. I used cheddar, gruyere, Gouda, and mozzarella. Season to liking! So I always going my potatoes in a separate pot of water because I find the amount of salt you need to get the potatoes properly seasoned is more than what id put in the soup broth. But I also like more small potato bits in mine
