#creatorsearchinsights #dinnerdishesideas 29g protein & 405 calories per serving Craving that big, bold one-pot comfort without blowing your day off track? This is my take on jollof — a smoky, spiced chicken-and-rice that's spicy, tangy and flavour packed AND still sits neatly in your macros. Chicken Jollof-Style Rice Makes 4 Servings of ~350g 405 kcal | 29g protein | 53g carbs | 9g fat per serving Ingredients For spice paste: 1 large red bell pepper, diced 1 large tomato, diced 1 onion, diced 6-8 garlic cloves, whole 4 dried red chillies, soaked in warm water 10 min then drained Pinch of salt A few sprays of oil 1 tsp lemon juice 2 tsp honey 1 tsp chilli flakes 1 tsp oregano 1 tsp oregano 1 tsp peri peri seasoning (you can skip if you don't have) 1/4 tsp turmeric powder 1 tsp coriander powder ½ tsp pepper powder 1 no-salt chicken stock cube Salt and water 500g boneless chicken thighs For the rice: 1 onion, chopped 4-5 garlic cloves, chopped 1 tbsp tomato paste or 2 tbsp tomato puree 1 bay leaf 2 cups hot water (approx - check as it cooks) 1 cup basmati rice, soaked 20-30 min then drained Coriander leaves, chopped Salt to taste 1 zero salt chicken cube (optional) Method 1. Heat a few sprays of oil in a pan over medium. Add the bell pepper, tomato, onion, whole garlic and drained chillies with a pinch of salt. Cook until brown and soft with some water. Cool, then blend with remaining spice paste ingredients and some water until smooth. 2. Cook one-third of the paste with the chicken and a few sprays oil. Cook 12-15 minutes, turning occasionally, until the chicken is glossy, sticky and brown. Remove and set aside. 3. In the same pan, add a few more sprays of oil. Add the chopped onion and garlic and sauté 2 minutes until soft. Stir in the tomato paste and cook 1 minute, then add the remaining paste and cook a further 5 minutes to deepen the flavour. 4. Add bay leaf, hot water and a little salt and the stock cube if using. Stir in rice. Bring to a simmer, cover, and cook on low for 15 mins until the rice is done. 5. Place the chicken pieces back over the rice, sprinkle coriander leaves, cover and cook 2 minutes and serve hot. (Chicken Jollof rice, one pot meal, healthy recipe) #chickenjollofrice
