The BEST healthy banana bread with 12g of protein per slice! 🍌 This is one of my most-made recipes, it is so easy to make and is the perfect healthy sweet snack! @promixjust launched Banana Cream protein powder so I thought it would be SO good in this recipe! You can also use Vanilla protein powder but the Banana Cream adds so much extra flavor! You can use the discount code ✨CLAIRE✨ for 10% off Promix! Makes 10 servings: ~220 calories, 12g protein, 30g carbs, 8g fat per slice Ingredients: - 1½ cups gluten-free oat flour - 2 servings @promix Banana Cream whey protein powder - 1 tsp baking soda - ½ tsp baking powder - ½ tsp salt - 1 tsp cinnamon - 3 large very ripe bananas, mashed - 2 large eggs - ½ cup plain Greek yogurt - ¼ cup pure maple syrup - 2 tbsp grass-fed butter, melted and slightly cooled (can sub for melted coconut oil) - 1 tsp vanilla extract - ½ cup dark chocolate chips - 1/4 tsp flaky sea salt Instructions: 1. Preheat oven to 350°F. Line a 9x5-inch loaf pan with parchment paper. 2. In a medium bowl, whisk together the oat flour, protein powder, baking soda, baking powder, salt, and cinnamon. 3. In a large bowl, mash the ripe bananas until mostly smooth. Whisk in the eggs, Greek yogurt, maple syrup, melted butter, and vanilla extract until combined. 4. Add the dry ingredients to the wet ingredients and gently fold until just combined. Avoid over mixing. 5. Roughly chop the chocolate using a sharp knife so you have some big and small pieces. Fold in most of the chocolate chips, reserving a few tablespoons for topping. 6. Transfer the batter to the prepared loaf pan and spread evenly. Sprinkle with extra chocolate chips and a pinch of flaky sea salt. Bake for 45–55 minutes, or until the center is set and a toothpick comes out with a few moist crumbs but no wet batter. 7. Allow to cool in the pan for 15–20 minutes, then transfer to a wire rack. Let cool further before slicing. 8. Enjoy!
