Crispy edges, juicy salmon, and so much flavor in every bite 🍣🔥 I made these Baked Salmon Sushi Cups for Delish a little while ago, and my family absolutely loved them! Perfect for lunch, dinner, or a little snack in between 👊 My tip: enjoy them fresh! To me, the nori and salmon flavors get stronger after a night in the fridge, so these taste best served right away. BAKED SALMON SUSHI CUPS 🍣 Makes 12 | Ready in 40 minutes Recipe from Delish Ingredients: • Cooking spray • 2 cups cooked sushi rice • 3 nori sheets, cut into quarters • 1½ lb skinless salmon, cut into ½-inch cubes • 2 scallions, thinly sliced, plus extra for topping • 1 tsp toasted sesame oil • 4 tbsp Kewpie mayo, divided • 2¼ tsp sriracha, divided • ¼ tsp kosher salt • 2 tsp black and white sesame seeds Instructions: 1. Preheat your oven to 400°F with a rack in the upper third. Lightly spray a standard 12-cup muffin tin. 2. Add a heaping tablespoon of cooked sushi rice to the center of each nori square. Gently press each square into a muffin cup, rice facing up, then flatten the rice into an even layer. Adding the rice first helps soften the nori so it bends without cracking. 3. Mix the salmon with the scallions, sesame oil, 2 tablespoons mayo, 2 teaspoons sriracha, and salt. 4. Divide the salmon mixture between the cups, adding about ¼ cup to each. 5. Bake for about 11 minutes, then broil for 2–4 minutes until the tops have some color and the salmon is cooked through. Watch closely while broiling! 6. Let cool for 5 minutes. Meanwhile, mix the remaining 2 tablespoons mayo with the remaining ¼ teaspoon sriracha. 7. Drizzle the sauce over the cups and finish with sesame seeds and extra scallions. Serve fresh and enjoy! 👊 Save this recipe for your next sushi night 🍣 #highprotein #dinner #EasyDinner #sushi #salmon
