RED WINE BRAISED SHORT RIBS 🍷 I make this recipe once a year and it gets better each time. 🥕🧅🥩🍷🌿 2.5 lb beef short ribs Salt + pepper 1 tbsp beef tallow 1 medium onion, chopped 3–4 carrots, chopped 3 celery stalks, chopped 5 garlic cloves, minced 2 tbsp tomato paste 2 cups red wine 2 cups beef bone broth Fresh rosemary Fresh thyme 3 tbsp butter 🧈 1. Season short ribs generously with salt and pepper. Sear in beef tallow or oil over medium-high heat until deeply browned on all sides, then remove. 2. Add onion, carrots, and celery and cook until softened. Add garlic and tomato paste and cook for 1–2 minutes until the tomato paste deepens in color. 3. Pour in the red wine and simmer uncovered for 8–10 minutes, allowing it to reduce slightly before adding the bone broth. Add bone broth, rosemary, thyme, and short ribs. The liquid should come about 2/3 of the way up the short ribs. They should not be completely submerged. 4. Cover and braise at 325°F for about 3 hours, or until the meat is fork tender. 5. Remove the short ribs and strain the braising liquid into a saucepan, discarding the vegetables and herbs. Simmer the strained sauce uncovered until reduced and thickened to your liking. 6. Lower the heat and stir in about 3 tbsp butter at the end for a rich, glossy sauce. Spoon over the short ribs and serve. 7.
