That yam sitting in your kitchen could be growing mould without you even knowing it. And cutting off the visibly affected part may not make the rest safe to eat. One of the moulds that can grow on yam is Aspergillus, including species such as Aspergillus flavus, some of which can produce aflatoxins. These toxins are harmful to humans and can cause serious health problems, particularly with repeated exposure. So, what should you do? If you notice mould growing on your yam, please don’t just scrape it off, cut away the affected portion or apply salt and assume the remaining yam is safe. The safest advice is to discard the entire affected yam. To store a partially used yam: 1. Keep the cut surface clean and dry. 2. Store it in a clean, dry, well-ventilated place. 3. You can place it in a breathable paper bag or an open traditional basket rather than sealing it in an airtight nylon bag. 4. Inspect it regularly for signs of spoilage or mould growth. Remember, not every discoloured yam is mouldy, but once you identify actual mould growth, don’t take chances with your health. Food safety starts in your kitchen.
