@christopherhopkins1: **Classic Strawberry Shortcake: A Taste of Sweet Summertime** There is nothing quite like the nostalgic, comforting taste of a homemade strawberry shortcake. It’s a timeless treat that brings a smile to everyone’s face—especially when topped with plenty of fresh berries and a cloud of fluffy whipped cream. Here is an easy, fuss-free recipe perfect for your next afternoon tea or family gathering! **Simple Strawberry Shortcake** *Prep time: 15 minutes | Serves: 6* **Ingredients:** * **The Berries:** 1 lb fresh strawberries (sliced) tossed with 2 tablespoons of sugar. Let them sit for 10 minutes to get nice and juicy. * * **The Shortcakes:** 2 cups all-purpose flour, 1/4 cup sugar, 1 tablespoon baking powder, 1/2 teaspoon salt, 6 tablespoons cold butter (cut into small pieces), and 3/4 cup heavy cream (plus a little extra for brushing). * * **The Cream:** 1 cup heavy whipping cream whipped with 1 tablespoon of powdered sugar until soft peaks form. **Instructions:** 1. **Prep:** Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. 2. 2. **Mix:** In a bowl, whisk your dry ingredients. Use a fork or your fingers to rub the cold butter into the flour until it looks like coarse crumbs. Gently stir in the 3/4 cup of cream until a soft dough forms. 3. 3. **Shape:** Drop large spoonfuls of dough onto your baking sheet. Brush the tops with a little extra cream and bake for 12–15 minutes, until they are golden brown. 4. 4. **Assemble:** Once slightly cooled, split the shortcakes in half. Spoon a generous amount of strawberries and their juices over the bottom half, add a large dollop of whipped cream, and place the top half back on. **Pro Tip:** If you want to make it even easier, you can serve these over high-quality store-bought biscuits or sponge cakes!
