@fat.to.fit.amyp: Pumpkin Protein Pancakes are good on their own. But add this topper? A true 10/10 Fat To Fit meal. 🥘 PUMPKIN PROTEIN PANCAKES ½ cup organic egg whites 1 organic pasture-raised egg 1 scoop vanilla protein powder ¼–½ cup canned organic pumpkin Use pure pumpkin, not pumpkin pie filling. Mix the ingredients together and cook over medium-low heat. Be patient before you flip them! 36g protein. Zero added sugar. Too few carbs to count. NOW ELEVATE THE DISH AND THE PROTEIN ½–⅔ cup Good Culture cottage cheese 1 tablespoon Chia Smash (yum!) Add those on top and now we are at: 55g protein 💪🏼 Zero added sugar. Too few carbs to count compared to traditional pancakes. Creamy, a little sweet, and extra protein. This is how I make pancakes a full, satisfying meal. No calorie counting. Just real food that keeps me full, fueled, and on track. The same way I lost 70 lbs in my 50s and have kept it off for 3 years. Save this for your next pancake breakfast. Amy, these look fantastic! 🎃🥞❤️👏
As a vascular surgeon, I’m always encouraging people to find nutritious meals they genuinely enjoy, because those are the habits we’re much more likely to maintain over time.
I love that you’ve found a creative way to incorporate protein into a seasonal breakfast. And pumpkin brings some fiber, potassium, and carotenoids to the table, too!
I also appreciate recipes that show healthy eating doesn’t have to mean giving up foods we love. Sometimes it’s simply about finding a different way to prepare them.
And I have to ask, what’s that delicious-looking topping? 😂❤️
