For the filling, peel the apples and grate them coarsely. Cook them with the sugar in a pan until all the liquid has evaporated. Stir in the cinnamon and walnuts and let cool completely. The filling must be dry, otherwise it will make the dough soggy. 2. Mix the butter, egg yolk, yogurt, powdered sugar, salt and vanilla. Mix the flour with the baking powder and add it gradually until you have a smooth, soft dough that no longer sticks to your hands. 3. Divide the dough into about 15 pieces (about 30 g each) and roll each into a small oval. Place some filling lengthwise in the middle. 4. Fold the right and left sides over the filling towards the middle and press the seam together well with your finger. Leave both ends open so the filling shows. 5. Place the cookies on a baking tray lined with parchment paper and chill for 15-20 minutes - this way they keep their shape nicely in the oven. 6. Preheat the oven to 180 °C (350 °F), top and bottom heat. Bake for about 18-20 minutes until the bottoms are lightly golden - the tops stay pale. 7. Let cool and dust with powdered sugar. Enjoy! 🤍
