I think it’s based on the “bacteria doubles every 20 mins” and only takes 4 hrs to become at a level where it can cause harm/ someone to be unwell. Still crazy to think a sandwich can be out for that long, but its safety not quality I guess.

So what it includes is prep time plus sitting out to be eaten too. So just say for example, at work for me it can take 1-2 hours to prep/make all fillings and sandwiches, it can then be put in the fridge for a bit and then taken out and put on a platter to be eaten.

4 hrs is the standard time food can be out. That’s not a surprise if you’ve done your food cert before. This includes max time of all products are out in production also. It’s to do with the doubling rate of bacteria. It doesn’t mean you should or it won’t compromise quality, it means in 4 hrs you have to bin it due to the risk of bacteria.

it's BC they can be out of the fridge safe temp for 4 hours max, after that it must be thrown out. so if it takes you 40 minutes to make them, they only have 3h20m to be left out for service

As a chef in America I would have said 4 🤷🏻♀️that’s how long we can leave buffet items out, charcuterie boards, etc. the rule is it must be eaten or thrown away within those 4 hours

I always wonder how long when packing my sons lunch, Vegemite I don’t usually worry about but ham and cheese I make sure the lunch box has a big ice pack on top of it inside his lunch bag so it stays cold/ cool till lunch time 😅

I’ve done many food safety courses. 4 hours is correct. It’s safe. All cooked food is safe for up to four hours. Scientists have tested the bacteria growth etc. it’s like the cooked chickens at Woolies etc. good for four hours (unless you put it in the fridge.
