Corned beef microwaved and drained so it fries up drier, tomato seeds out, and the potatoes soaked and fried first so they're soft all the way through. 🥫 1 can corned beef · ½ onion · 2–3 tbsp minced garlic · 2 Roma tomatoes, seeded (optional) 🥔 1 cup potatoes, ½-inch dice · 3 tbsp neutral oil · pinch of salt 🍚 White rice or garlic rice · black pepper to taste 1. Soak the potatoes 10–15 min, then pat very dry 2. Microwave the corned beef 15–30 sec, pour off the liquid 3. Fry the potatoes on medium 8–10 min till golden and fork-tender, pinch of salt, set aside 4. Onion 2–3 min, then garlic 30–60 sec 5. Corned beef in the center, let it crisp a minute, then stir, 3–4 min 6. Potatoes back in 7. Tomatoes last, 3–5 min till they soften. Taste, salt only if it needs it, black pepper 8.
