@annaluna444: Mashed potatoes 4-5 Yukon gold potatoes washed & chopped up 1 carton of veggie broth 4 cloves of peeled garlic 1 tablespoon vegan butter 1/4 cup dairy free heavy cream (I use county crook brand) 1 tablespoon vegan mayo 1/2 teaspoon onion powder 1 tablespoon fresh chives chopped Salt & pepper to taste 1) add potatoes & fresh garlic to a pot & cover with veggie broth. Bring to a boil & cover. Simmer until potatoes are soft all the way through 2) strain potatoes. You can save some of the liquid just in case. Next add butter, dairy free heavy cream, & vegan mayo to the potatoes. Mash together until smooth. 3) once potatoes are smooth you can add salt, pepper, onion powder, & the chives. Mix until evenly incorporated. *if you are making for a large amount of people you can double this recipe.
