Macarons Ingredients •	90 g almond flour (about 1 cup) •	90 g powdered sugar (about ¾ cup) •	90 g granulated sugar (about ½ cup) •	67 g egg whites (about 2 large egg whites / ¼ cup) •	1 drop gel food color Instructions 1. In a clean, dry bowl beat the egg whites with an electric whisk. Add the granulated sugar in 3 additions while mixing. Add the gel color and keep beating until the meringue becomes thick and glossy. When you turn the bowl upside down, it should not fall. 2. In another bowl mix the almond flour and powdered sugar together (you sifted them before separately). 3. Add the dry mixture to the meringue in 3 additions, folding gently with a spatula from bottom to top so you keep the air inside the mixture. 4. Macaronage. Start folding by pressing the batter slightly against the bowl, making a half circle toward the center, then pulling from the middle and folding again. Keep checking every three macaronnage by lifting the spatula and letting the batter fall. •	If it cuts off, keep mixing. •	When it falls smoothly and continuously, stop immediately. 5. Put the batter in a piping bag and cut the tip with scissors. Turn your baking tray upside down, place parchment paper on it, then pipe the macarons by pressing the piping bag while keeping your hand straight up. 6. Tap the tray on the counter 4–5 times to release air bubbles. 7. Leave the macarons at least 30 minutes until the surface becomes dry. When you touch the top lightly, it should not stick to your finger. 8. Preheat your oven to 284°F (140°C) with bottom heat only. Put the macarons inside and bake 8 minutes, open the oven quickly then close it, and bake 8 more minutes (16 minutes total). Tips •	Grams are more accurate than cups, especially for macarons. •	Make sure the bowl and whisk are clean and dry so the meringue whips properly. •	Let macarons cool completely before removing them from the parchment. #macarons #frenchmacarons #macaron #baking #EasyRecipe
