@daikon.princess7: I've been obsessed with all things fall lately, especially anything apple cider flavored! So of course, I had to turn one of my favorite treats into apple cider donuts. These donuts are finished with a sweet vanilla bean glaze, they're the perfect little fall treat! 🍎🍂🍩🤎☕️✨ Apple Cider Donuts Ingredients Dough - 3 cups apple cider - 1/4 cup butter, melted - 120 g buttermilk - 2 large eggs - 200 g sugar - 110 g light brown sugar - 510 g all-purpose flour - 5 g ground cinnamon - 8 g baking powder - 6 g salt - 2 g baking soda - Oil, for frying Vanilla bean glaze - 240 g powdered sugar - 80 g whole milk or heavy cream - 3 g vanilla bean paste - Pinch of salt 1. To reduce the apple cider, pour the apple cider into a small pot over medium-high heat. Bring to a boil, then reduce to medium heat and simmer until reduced to ¾ cup. Let cool completely. 2. Meanwhile, brown the butter in a saucepan over medium heat. Stir until melted, then continue cooking and stirring for 4–5 minutes, until the butter smells nutty and golden-brown specks form at the bottom. Transfer to a heatproof bowl and let cool to room temperature. 3. To make the donut dough, combine the cooled butter, buttermilk, and eggs in the bowl of a stand mixer. Whisk for 1–2 minutes. 4. Add the cooled concentrated apple cider, brown sugar, and granulated sugar. Beat for another 1–2 minutes. Add the cinnamon, baking powder, salt, and baking soda. Whisk until smooth. 5. Add the flour and mix on low speed just until combined, being careful not to overmix. Transfer the dough to a bowl, cover with plastic wrap, and chill in the freezer for 1 hour or in the fridge for at least 2 hours, until firm. (You can also refrigerate the dough overnight.) 6. Once firm, transfer the dough to a generously floured surface. It will be soft but should hold its shape. If it is too sticky to handle, return it to the freezer for another 30 minutes. 7. Roll the dough to ¾-inch thick, dusting underneath with more flour as needed to prevent sticking. 8. Use a donut cutter to cut out the donuts, then place each donut on its own square of parchment paper. Gently gather and reroll the scraps to cut out the remaining donuts. 9. To fry the donuts, heat oil over medium heat. Working in batches of 2–3, use the parchment squares to carefully lower the donuts into the oil. Remove the parchment with tongs once it releases. 10. Fry for about 2–3 minutes per side, until deeply golden and cooked through. Once done, transfer the donuts to a wire rack and cool for 5-8 minutes before glazing. 11. To make the glaze, whisk together the powdered sugar, milk, vanilla bean paste, and salt until smooth. 12. Dip the donut into the glaze, then lift and let the excess drip back into the bowl. Place on a wire rack over parchment paper and let the glaze set. 13. Enjoy warm. #applecider #appleciderdonuts #donuts #falltreats #homemade
