Is it officially soup season? ☺️ First soup of the year - creamy potato soup with crispy bacon & cheddar! 🧀🥔 Ingredients: Potatoes – 800 g Bacon – 150 g Yellow onion – ½ medium Celery – 2 stalks Garlic – 3 cloves Butter – 1 tbsp Chicken or vegetable broth – 700 ml Milk – 300 ml Heavy cream – 250 ml Cheddar cheese – 120 g, grated Smoked paprika – ½ tsp Salt – to taste Black pepper – to taste Green onion – for serving Bread – for serving Instructions: 1. Cut the bacon into small pieces and cook in a large pot over medium heat until crispy. Transfer to a plate, leaving the bacon fat in the pot. 2. Add the butter, diced onion and celery. Cook for 5 minutes until softened. Add the minced garlic and stir. 3. Pour in the broth, milk and heavy cream. Add the smoked paprika and season with salt and black pepper. Bring to a boil. 4. Add the potatoes, cut into small cubes, and simmer for 15–20 minutes, until the potatoes are very tender. 5. Use a potato masher or an immersion blender to mash some of the potatoes, leaving some pieces for texture. 6. Add the grated cheddar and stir until melted. 7. Taste and adjust the seasoning. 8.
