Raw Salmon in Papaya Sauce Recipe ✨ Papaya sauce is really based on preference. Everyone has their own way of making it. This sauce recipe is not too deep in the funky aroma (since I didn’t add padaek, black crab paste or too much shrimp paste). I think raw salmon pairs well with any papaya sauce recipe out there so choose one you like, and try it out (: Salmon Prep/Other Tips: (Followed The Sushi Guy on YT) ✨ Recommend using FARM RAISED (not wild caught) salmon same day you buy it. If you don’t use it right away, freeze it. I have only used salmon from Costco when I DIY at home. Eat at your own risk consuming raw fish. Do what you’re comfortable with. ✨ Only buy if it’s same day as pack date or like a day later to ensure your salmon doesn’t smell fishy. ✨ Go light on the salt, just enough where the salmon is covered all over with it. ✨ Go light on the lime juice, so your salmon doesn’t turn opaque and firm up. ✨ I usually don’t use the meat closer to the tail end of the salmon if I’m eating raw (this is just my preference). ✨ If you don’t have a mortar and pestle chop up your chili peppers and garlic, use granulated sugar, crush tomatoes with spoon. ✨I like to go heavy on the tomatoes. It helps make the sauce more liquidy which I like (: Sauce Ingredients/Measurements: ✨Thai Chili Peppers [use as many you want] ✨Dried Chili Peppers [use as many you want] ✨Garlic [2 large cloves] ✨MSG [five finger pinch] ✨Palm Sugar [1 block or use regular sugar a spoon full] ✨Tomato (Roma or Cherry Tomatoes) [2-5 Roma or 6-12 cherries] ✨Lime [Half of whole lime] ✨Frozen Crab (Brand: Ba Khia) [2 scoops with some crab] ✨Shrimp Paste (Brand: Twin Chicken) [About nickle size amount] ✨Tamarind Concentrate [1 spoon full] ✨Fermented Fish Sauce (Brand: Zab Mike orange bottle) [2 spoon full] Step-by-step for Papaya Sauce: 1. Crush raw/dried chili peppers, garlic, and palm sugar block with msg in mortar and pestle. 2. Once everything is crushed, add frozen crab juice and a couple crab shells. Crush the crab shells a little bit with pestle to release some flavors. 3. Add in your tomatoes, lime juice, and a little shrimp paste - lightly crush tomatoes. 4. Now add in the rest of the liquids - fish sauce, tamarind concentrate, fermented fish sauce. 5. Mix mix mix and your done with the sauce. 6. Chop shallots and cilantro. 7. Put everything together - salmon, papaya sauce, shallots, cilantro - and mix well in a bowl. 8. Enjoy with whatever sides you like (: #southeastasian #asianfood #papayasalad #salmonrecipe #hmonggirl
