@thecilantrogirl: RECIPE: makes one 8x8 inch cake or 8-10 individual 5oz dessert cups. sponge cake: 120g granulated sugar (40g for yolks + 80g for whites) 3 large eggs (yolks and whites separated) 45g whole milk 1 tsp vanilla extract 110g all-purpose flour 10g cornstarch ¾ tsp baking powder ¼ tsp salt ¼ tsp cream of tartar (optional) rasmalai milk: 300g whole milk 240g evaporated milk (unsweetened) 150g sweetened condensed milk ¼ tsp ground cardamom 10–12 saffron strands ¼ tsp rose water (optional) whipped cream: 240g cold heavy whipping cream 10g powdered sugar ¼ tsp vanilla extract ———————— preheat oven to 350°f (175°c). line only the bottom of an 8x8-inch baking pan with parchment paper. do not grease the pan. in a bowl mix together flour, cornstarch, baking powder and salt. set aside. separate egg yolks and whites into two bowls. add 40g sugar to the egg yolks and whisk for 2–3 minutes until pale, thick and creamy. add milk and vanilla extract, and gently fold the dry ingredients using a spatula. in a separate clean, dry bowl, beat the egg whites until foamy. add cream of tartar (optional), then gradually add the remaining 80g sugar in 2–3 batches while beating until stiff peaks form. peaks should hold their shape when you lift the whisk. gently fold whipped egg whites into the yolk mixture in 2–3 batches. be careful not to overmix; this will keep the sponge light and fluffy. pour the batter into the prepared pan and spread evenly. bake for 30–35 minutes, until lightly golden and a toothpick inserted into the center comes out clean. leave the cake in the pan to cool completely. once cooled, carefully remove the cake and peel off the parchment paper. cut the sponge into small pieces and arrange them in individual dessert cups, or leave it whole for a full-sized cake. for the rasmalai milk, combine whole milk, evaporated milk, condensed milk, saffron, cardamom and rose water. mix well. slowly pour the rasmalai milk over the sponge in batches, allowing it to soak in between each addition. cover and refrigerate for at least 3 hours, or preferably overnight. #rasmalai #tresleches #Diwali #sweets #EasyRecipe
