@manianddavid: An afternoon with Kesang Choedon. Her mother lived to 110 and saw all five of Bhutan’s kings. Kesang learned to cook beside her and her grandmother, and has spent the last decade making sure that knowledge isn’t lost. She showed us foods still foraged from the forests today. Some, she told us, have been eaten here since the Buddha’s time. It’s the same wisdom Samté began with: wild Bhutanese ingredients, gathered with care and respected for what they are. The knowledge we build on was here long before us. Our job is to listen, and to carry it carefully. Thank you, Kesang. #pure #cooking #ingredients #bhutan
