Lamina is the first Lisbon restaurant from Vasco Coelho Santos, the Michelin-starred chef behind Euskalduna in Porto. The concept is nose-to-tail: every part of the animal gets used, from the prime cuts to the bits most places throw away. Everything is cooked over live fire. The food is Portuguese at heart with a few Spanish touches.
