Cheesy Chicken Enchiladas with Homemade Red Enchilada Sauce Ingredients For the Chicken Filling: Boneless Skinless Chicken Breasts – 1 1/2 lbs Olive Oil – 1 tbsp Yellow Onion – 1 medium, finely diced Garlic – 3 cloves, minced Black Beans – 1 cup, drained and rinsed Corn Kernels – 1 cup Shredded Cheddar Cheese – 1 cup Shredded Monterey Jack Cheese – 1 cup Ground Cumin – 1 tsp Chili Powder – 1 1/2 tsp Smoked Paprika – 1 tsp Salt – 1 tsp Black Pepper – 1/2 tsp For the Enchilada Sauce: Tomato Sauce – 2 cups Chicken Broth – 1 cup Olive Oil – 2 tbsp All-Purpose Flour – 2 tbsp Chili Powder – 2 tbsp Ground Cumin – 1 tsp Garlic Powder – 1 tsp Onion Powder – 1/2 tsp Dried Oregano – 1/2 tsp Salt – 1/2 tsp For Assembly: Flour Tortillas – 8 large Shredded Monterey Jack Cheese – 1 1/2 cups Shredded Cheddar Cheese – 1 cup Fresh Cilantro – 2 tbsp, chopped Recipe Preheat the oven to 375°F (190°C). Lightly grease a 9-by-13-inch baking dish with cooking spray or a little olive oil. Place the chicken breasts in a saucepan and cover with water or chicken broth. Season lightly with salt and pepper. Simmer for 15–18 minutes until fully cooked and the internal temperature reaches 165°F (74°C). Remove the chicken from the saucepan and let it cool slightly. Shred it using two forks into small, tender pieces. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the diced onion and cook for 3–4 minutes until softened. Stir in the minced garlic and cook for another 30 seconds. Add the shredded chicken, black beans, corn, cumin, chili powder, smoked paprika, salt, and black pepper. Mix thoroughly and cook for 3–4 minutes. Remove the skillet from the heat. Stir in 1 cup cheddar cheese and 1 cup Monterey Jack cheese until the filling is evenly combined. To prepare the enchilada sauce, heat 2 tablespoons of olive oil in a saucepan over medium heat. Whisk in the flour and cook for about 1 minute. Add chili powder, cumin, garlic powder, onion powder, oregano, and salt. Gradually whisk in the chicken broth and tomato sauce until smooth. Simmer the sauce for 5–7 minutes, stirring occasionally, until thickened and rich. Remove from the heat. Spread about 1/2 cup of enchilada sauce across the bottom of the prepared baking dish. This prevents the tortillas from sticking and adds flavor to the bottom layer. Spoon the chicken filling down the center of each tortilla. Roll each tortilla tightly and place it seam-side down in the baking dish. Pour the remaining enchilada sauce generously over the rolled tortillas, making sure the tops and edges are completely covered. Sprinkle the remaining Monterey Jack and cheddar cheese evenly over the enchiladas, creating a thick, cheesy topping. Bake uncovered for 20–25 minutes until the cheese is melted, golden, and bubbling around the edges. Let rest for 5 minutes after removing from the oven. Garnish with freshly chopped cilantro and serve hot with sour cream, guacamole, Mexican rice, or fresh salsa. Follow for more cheesy comfort food recipes and delicious homemade dinner ideas!
