@simplegoodrecipes: Ingredients: • 1 box jiffy mix • 1 pound ground beef • 1 can red enchilada sauce • small can green chilies • taco seasoning • cheese sharp cheddar, pepper jack Instructions: Prepare a 1 box of jiffy mix according to the directions. I like to add a can of diced chilies & jalapenos in mine. While that's cooking, brown 1Ibs of ground beef with a diced onion. Drain the grease then add 1 pack of taco seasoning and 1/2 cup of water. Allow it to simmer for a couple minutes. When the cornbread is done, use a fork to poke holes in the top. Pour on half of a can of enchilada sauce. Then the taco meat Top with 4 oz grated sharp cheddar and 4 oz grated pepper Jack. Bake for another 10 minutes or until the cheese is golden brown and bubbly.
