AD | Loaded Sweet Potato Bowl Today I’m showing you one of my high protein & fibre rich meal prep bowls that has been on repeat in my kitchen for the past few weeks. This meal prep involves a soft roasted sweet potato, quinoa, pomegranate, mint & lemon salad, Middle Eastern style lamb mince, crispy kale and avocado. This meal prep is all about Smart Budgeting by stretching our budget with clever meal transformations, batch cooking, and affordable, everyday @Sainsbury’s that feel abundant without the high cost. Today were creating filling, comforting, and genuinely enjoyable meals using accessible, budget-friendly, and naturally fibre-rich staples, from the ingredients and full recipe below 4 large sweet potatoes 200g quinoa 500ml water/stock 2 large pomegranates de seeded 25g finely chopped mint 2 lemons juiced 500g lamb mince 1 tbsp Sainsbury’s Shawarma seasoning 1/2 tsp smoked paprika 1/2 tsp ground cumin 200g kale sliced 1 avocado sliced Start by heating an oven to 220C, then poke your sweet potatoes with a fork. Roast for 45-60 minutes, turning half way. While that’s cooking, place a sauce pan with 500ml water/stock and bring to a boil. Rinse the quinoa, then add to the pan and cook for 20 minutes on a low heat. Once cooked, add to a large bowl with the mint, pomegranate, lemons juiced, salt & pepper to taste, then set aside and reserve. Now place the kale in an air fryer or oven tray with a dash of oil & salt, then roast for 5 minutes at 180C, until crispy. For the lamb, heat up a large skillet on a medium high heat. Add a dash of oil, then add the lamb mince and cook for a few minutes until brown. Add the seasonings, the cook for a further 5 minutes, season to taste with salt, then set aside. Now you’re ready to serve and enjoy. #steak #chimichurri #sweetpotato #FoodTok #cooking
