The soup that cures all ❤️‍🩹 Sopa de Pollo 🍲🇨🇺 Ingredients: • Bone-in chicken breasts • ½ onion, diced • ½ red bell pepper, diced • ½ green bell pepper, diced • 4 garlic cloves, minced • Kinder’s Chicken Salt Seasoning • ¼ cup tomato sauce • 1 tsp cumin • 1 tsp oregano • 1 tbsp chicken bouillon paste • 1 tbsp chicken bouillon powder • Potatoes, peeled and chopped • Frozen corn on the cob • Calabaza, chopped • Thin noodles (fideos) • Water • Salt to taste Instructions: 1. Season chicken breasts with Kinder’s Chicken Salt. Using the sauté function on your Instant Pot, brown the chicken on both sides. Remove and set aside. 2. In the same pot, sauté the diced onion and bell peppers until softened. Add the minced garlic, tomato sauce, cumin, oregano, and chicken bouillon paste. Stir everything together to create your sofrito. 3. Return the chicken to the pot and add water, keeping it below the pressure cooker MAX fill line. 4. Secure the lid and pressure cook on HIGH for 20 minutes. 5. Once the pressure has safely released, remove the chicken and allow it to cool before shredding. 6. Add the potatoes and frozen corn to the broth. Stir in 1 tbsp of chicken bouillon powder and salt to taste. Let simmer until the potatoes begin to soften. 7. Add the calabaza and continue cooking until almost tender. 8. Once the calabaza is almost done, add the thin noodles and shredded chicken back into the pot. 9. Let everything simmer until the noodles are cooked and the vegetables are fork-tender. #CubanFood #SopaDePollo #CubanRecipes #ChickenSoup #SoupRecipe
