Mini versions of my favorite Persian dish, Tahchin, baked in a muffin pan. Saffron rice with a little @Sadaf Foods rose water, filled with chicken and caramelized onions, and finished with barberries and pistachios. Tahchin Cupcakes Makes 12 Ingredients For the rice: - 2 cups uncooked basmati rice - 1 cup plain Greek yogurt - 3 egg yolks - 3 tbsp brewed saffron water - 1 tsp rose water - 3 tbsp avocado oil (or another neutral oil) - 1 tsp salt, or to taste For the chicken filling: - 1 lb boneless, skinless chicken breast or thighs - 1 large onion, thinly sliced - Oil or butter - Tumeric - Saffron water - Salt and black pepper For the topping: - ⅓ cup dried barberries - 1 tbsp butter - 1–2 tsp sugar - Pinch of salt - Chopped pistachios Recipe: 1. Rinse the basmati rice until the water runs clear. Soak in salted water for at least 20 mins. Boil in salted water until partially cooked, about 5–7 minutes. Drain and set aside. 2. Season the chicken with turmeric, saffron water, salt, and pepper. Cook then shred or finely chop. 3. Caramelized your onions and combine with the chicken. 4. In a large bowl, whisk together Greek yogurt, egg yolks, saffron water, rose water, oil, and salt. Gently fold in the parboiled rice until evenly coated. 5. Generously grease a standard 12-cup muffin tin. Press a layer of saffron rice into the bottom. Add a spoonful of chicken filling, then cover with more rice, pressing gently to compact. 6. Cover lightly with foil and cook at 350°F for approximately 50–75 minutes, until the edges are deeply golden and crisp. For the last 10-20 mins, take the foil off and cook uncovered. Keep a close eye on it bc every oven is different. Allow to cool down for a few mins uncovered before removing the tahchins from the pan. You can place a tray over the pan and flip it like tahdig, or carefully scoop out each out. 7. For the topping, briefly sauté barberries in butter with sugar and a pinch of salt, about 1-2 mins. Spoon over the tahchins and finish with chopped pistachios.
