French Onion Chicken & Orzo - Maybe contrary to popular belief, but you don’t need butter or cheese to get that super rich French onion flavour - and this recipe absolutely has a chokehold on me🤤 Save this for your next cozy one-pot dinner! 👇 - INGREDIENTS * 1 lb boneless chicken thighs * Seasonings: Salt, black pepper, ground thyme, and cayenne pepper (to taste) * 4–5 medium yellow onions, sliced root to tip * 3–4 cloves garlic, minced * 300g dry orzo * 1L stock (chicken, beef, or vegetable) * 1/4 cup unsweetened oat creamer * 2–3 cups fresh baby spinach * Fresh thyme sprigs & cooking oil - RECIPE 1. Season chicken generously with salt, pepper, ground thyme, and cayenne. Heat oil in a large skillet over medium-high heat. Sear chicken until golden and cooked through (~10 minutes). Remove and set aside. 2. In the same pan, add a touch of oil, the sliced onions, and 1/4 cup of stock. Cover with a lid and cook for 5 minutes until softened. Remove lid, drop heat to medium, and cook for 15–20 minutes, stirring occasionally, until deeply golden and jammy. (Tip: Add splashes of stock as needed to scrape up those delicious brown bits on the bottom!) 3. Add minced garlic and dry orzo directly to the onions. Toss for 1 minute until fragrant. Pour in the remaining stock and add a few sprigs of fresh thyme. (You can add the chicken back in now or at the end!). Simmer for 8–10 minutes until orzo is tender. 4. Lower heat, stir in the oat creamer, and fold in the fresh spinach until wilted. Remove thyme sprigs, toss the chicken back in, and serve warm! - #healthyfood #explore #EasyRecipe #highprotein #comfortfood
