The Thanksgiving Table Part 2: Sweet Potato Casserole 🧡 this side dish is my all time favorite (& yes i believe marshmallows belong on sweet potatoes). recipe below!! Sweet Potato Casserole Ingredients * 2–3 lbs sweet potatoes, mashed * 6 tbsp butter, melted * 1/2 cup brown sugar * 1 tbsp cinnamon * 1 tsp nutmeg * 1 tsp vanilla extract * 1 tsp salt * 10 oz marshmallows * Extra brown sugar for topping (optional) Instructions 1. Bake the sweet potatoes: Preheat oven to 400°F. Wash and dry the sweet potatoes, then poke each one 6–10 times with a fork to allow steam to escape. Lightly rub the skins with olive or vegetable oil if desired, then wrap each potato loosely in aluminum foil. Place on a baking sheet and bake for 45–60 minutes, or up to 75–90 minutes for larger potatoes, until softened and easily pierced with a fork. Check for doneness around 45 minutes. 2. Mash the sweet potatoes: Carefully unwrap the potatoes and allow them to cool slightly before removing the skins. Mash the sweet potatoes in a large bowl until smooth. Alternatively, you can peel the sweet potatoes, cut them into large chunks, and boil until fork-tender before mashing. 3. Mix the filling: Add the melted butter, brown sugar, cinnamon, nutmeg, vanilla extract, and salt to the mashed sweet potatoes. Mix until everything is well combined. 4. Prepare the casserole: Preheat oven to 375°F. Grease a baking dish with oil or butter. Transfer the sweet potato mixture into the dish and spread it into an even layer. Sprinkle a little extra brown sugar over the top if desired. 5. Bake: Bake at 375°F for 30 minutes. 6. Add the marshmallows: Remove the casserole from the oven and evenly distribute the marshmallows over the top. Return to the oven for another 10 minutes, watching closely until the marshmallows are golden brown. 7. Serve: Remove from the oven and serve warm! #thanksgivingdinner #thanksgivingrecipes #thanksgivingfood #sweetpotato #sides
