Pan sear carrots on medium heat until fork tender. Set aside. 2. Peel, rinse, cut potatoes into large chunks and boil them in salted water until fork tender. Drain and steam dry for 10 minutes. 3. Mash potatoes with a ricer or mixer (on low speed) until smooth. 4. Heat the mash on low heat in a pot adding the heavy cream, butter, salt and pepper to taste. Set aside and keep warm. 5. Trim away any large, hard pieces of exterior fat, pat steaks dry. Cut into 1 inch bite sized pieces, season. 6. Sear the steak bites in batches in a cast iron or skillet over medium high heat for 1 minute flipping each piece over halfway through. Do not overcrowd the pan for even searing. Remove the steak bites and set aside. 7. In the same pan clean off any black residue from the steak, keeping the browned pan drippings. Add the butter and garlic, stirring it around for 1 min on medium heat. Add the honey, followed by the rest of the garlic honey butter ingredients until glossy. 8. Return steak bites back to the pan and continue to cook in the garlic honey butter for another minute or two or until it’s cooked to your liking.
