The bitterness always threw me off, and I never once found it appetizing. However, there are ways to make karawila a little less bitter and much more enjoyable. Pre-salting helps draw out excess moisture and mellow the bitterness, while deep-frying gives it a beautiful crispy texture and makes the bitterness less overpowering. Ever since I started living on my own, I've happily avoided karavila for nearly 15 years of my life. But I figured it was about time I gave this childhood nemesis another chance.
