وبالعافية ❤️ ## 🎃 Stuffed Pumpkin with Rice, Meat & Dried Fruits ### Ingredients: - 1 large sweet pumpkin. - Olive oil. - 2–3 tablespoons granulated or brown sugar. ### For the rice stuffing: - 2 cups rice (soaked in hot water for 20 minutes). - 500 g lamb or beef, cut into cubes. - 3 cups hot water. - 2 onions. - 3 tablespoons currants. - 3 tablespoons pine nuts. - ½ tea glass vegetable oil. - 2 tablespoons butter. - 1 teaspoon black pepper. - 1 teaspoon cumin. - Allspice, to taste. - Salt. - Optional dried fruits such as raisins, dried apricots, and dried plums (soaked and drained). Note: The original recipe also uses small red Iranian raisins. ### Instructions: 1. Wash and dry the pumpkin. Cut off the top to create a lid. 2. Remove the seeds and clean the inside. If desired, slightly thin the pumpkin walls. 3. Brush the inside and outside with olive oil. Sprinkle with granulated or brown sugar and rub gently. 4. Bake in a preheated oven at 200°C (390°F) for approximately 30 minutes, until slightly softened but still firm. You can skip this step if preferred. 5. If using beef, cook it in a pressure cooker with a little water for 10–15 minutes until tender. If using lamb, sauté it in a little oil until browned, then season with salt and black pepper. 6. Heat the vegetable oil and butter in a rice pot. Add the chopped onions and sauté until softened. 7. Add the pine nuts and sauté briefly. 8. Add the soaked, washed, and drained rice. Stir-fry for a few minutes. 9. Season with salt, black pepper, cumin, and allspice if desired. 10. Add the cooked meat, currants, and your choice of dried fruits. 11. Pour in 3 cups of hot water and cook for approximately 10 minutes. 12. Once the rice has absorbed the water, remove from the heat and let it rest. 13. Fill the partially baked pumpkin with the prepared rice mixture and cover with its lid. 14. Bake in a preheated oven at 190°C (375°F) for approximately 1 hour. 15. Check the pumpkin with a thin knife. If needed, bake a little longer until fully tender. Serve hot. Enjoy! ❤️
