There's really nothing like the comforting smell of warm, buttery yeast dough and sweet Saigon cinnamon filling your kitchen on a quiet morning. This homemade Cinnamon Swirl Bread bakes up with a golden-brown, tender crust and has a gorgeous, tight spiral of rich cinnamon-sugar in every slice. It's soft, fluffy, and perfectly sweet, making the best toast with creamy butter or the base for some truly decadent French toast. Yields 1 standard 9x5-inch loaf, serving 4 to 6 people. Ingredients: 3/4 cup warm milk (about 110°F) 1 packet (2 1/4 teaspoons) active dry yeast 1/3 cup granulated sugar, divided 2 3/4 cups all-purpose flour, plus extra for dusting 1 large egg, at room temperature 4 tablespoons unsalted butter, softened 1/2 teaspoon salt 2 tablespoons unsalted butter, melted 2 tablespoons ground cinnamon 1/4 cup brown sugar, packed Instructions: 1. Warm the milk, then stir in yeast and 1 teaspoon of sugar. Let sit for 5-10 minutes until frothy. 2. In a large bowl, combine remaining granulated sugar, 2 1/2 cups flour, and salt. 3. Pour the yeast mixture, softened butter, and egg into the dry ingredients. Stir until a shaggy dough forms. 4. Knead the dough for 8-10 minutes, adding flour if needed, until smooth and elastic. 5. Form into a ball, place in a greased bowl, cover, and let rise for 1-1.5 hours until doubled. 6. Punch down, turn onto a floured surface, and roll into an 8x16-inch rectangle. 7. Brush with 2 tablespoons melted butter, leaving a small border. 8. Mix brown sugar and cinnamon, then sprinkle over the buttered dough, pressing gently. 9. Roll tightly from the short end, pinching the seam shut. 10. Place seam-side down in a greased 9x5-inch loaf pan. Cover loosely and let rise for 45-60 minutes until puffy. 11. Preheat oven to 350°F (175°C). Bake for 30-35 minutes until golden brown. 12. Remove, cool in pan for 10 minutes, then transfer to a wire rack to cool completely before slicing. Chef's Notes: Make sure your dough is rolled tightly and the final seam is pinched firmly to prevent the swirl from separating. Letting it cool completely allows the crumb structure to set for neat, clean slices.
