• 1½ lbs sirloin steak, thinly sliced against the grain • 12 oz wide egg noodles • 2 Tbsp olive oil • 2 Tbsp butter • 1 small yellow onion, finely diced • 8 oz baby bella mushrooms, sliced • 4 garlic cloves, minced • 2 Tbsp all-purpose flour • 2 cups beef broth • 1 Tbsp Worcestershire sauce • 1 tsp Dijon mustard • 1 tsp paprika • ½ tsp onion powder • ½ tsp garlic powder • ¾ cup sour cream • Salt and black pepper, to taste • Fresh parsley, for garnish (optional) 1. Cook the noodles. Bring a large pot of salted water to a boil. Cook egg noodles according to package directions. Drain and set aside. 2. Sear the beef. Season sliced steak with salt, pepper, garlic powder and onion powder. Heat olive oil in a large skillet over medium-high heat. Sear beef in batches for about 1–2 minutes per side until browned. Remove and set aside. 3. Sauté the vegetables. Reduce heat to medium. Melt butter in the same skillet. Add diced onion and mushrooms. Cook for 6–8 minutes until softened and golden. Add minced garlic and cook another 30 seconds. 4. Make the sauce. Sprinkle flour over the vegetables and stir for 1 minute. Slowly pour in beef broth while stirring. Add Worcestershire sauce, Dijon mustard and paprika. 5. Simmer. Let the sauce gently simmer for 4–5 minutes, stirring occasionally, until thickened. 6. Make it creamy. Reduce heat to low. Stir in sour cream until the sauce is smooth and creamy. Do not boil. 7. Add the beef. Return steak and its juices to the skillet. Gently warm for 1–2 minutes, just until the beef is cooked to your liking. 8. Serve! Spoon the rich, creamy beef stroganoff over warm egg noodles. Garnish with fresh parsley and freshly cracked black pepper. #steak #stroganoff #dinner #comfortfood #chef
