@carisunnysideup: I honestly thought I was going to be on my own for a while. I had reached a place where I felt too tired to explain myself, too guarded to open up, and comfortable with simply trusting my own path. I wasn’t looking for anything or expecting much; I was just learning to be at peace with where I was. But sometimes life has a way of reminding you that not everything needs to be figured out or understood right away. Maybe I needed that time to find myself again, to stay true to who I am, and to build a kind of strength that doesn’t depend on anyone else. And somewhere along the way, something shifted. You made me realize that growing on my own doesn’t mean I have to close myself off to everything unexpected. I’m still learning, still finding my way, and keeping certain things close to my heart. But it’s beautiful when something you never planned for makes you look at life a little differently. Sometimes the most meaningful things arrive quietly, when you’re no longer searching for them. @Justin.Mijares1:3

FUNFETTI COOKIE ICE CREAM SANDWICHES 🍪🍨💗 For the cookies: - 1 ¼ cup salted butter melted - 1 cup light brown sugar - 1 cup caster sugar - A dash of vanilla extract (measure with your heart 🫶!) - 2 eggs - 3 cups all-purpose flour - 1 tsp baking soda - ¾ cup milk chocolate chips - ½ cup confetti sprinkles For assembly: - ½ tub of ice cream (I used @benandjerrys cookie dough ice cream!) For the cookies: 1. Add the melted butter, light brown sugar, caster sugar, and vanilla to a large sized bowl. Mix until combined. 2. Add the eggs one at a time, mixing after each addition. 3. Add the flour and baking soda. Mix just until the dry ingredients are incorporated. Do not over mix. 4. Fold in the milk chocolate chips and confetti sprinkles until evenly distributed. 4. Line a baking sheet with parchment paper. Divide the dough into evenly sized balls (I did 90g per dough ball). 5. Cover and refrigerate for 30 minutes or up to 24 hours. 6. Preheat the oven to 350°F or 180°C. Arrange about 5 chilled dough balls on the prepared baking sheet, leaving approximately 2 inches between them. 7. Immediately after removing the cookies from the oven, use a round cookie cutter or glass to gently shape them into even circles. If desired, press a few extra milk chocolate chips and sprinkles into the tops while they are warm. Let the cookies cool on the baking sheet for 5 minutes, then carefully transfer them to a wire rack to cool completely. 8. Once cool, freeze the cookies for 15 minutes before assembling. For assembly: 9. Pair the chilled cookies according to size. Place one cookie from each pair upside down on a work surface. 10. Let the vanilla ice cream soften at room temperature for 5–10 minutes, just until scoopable. Place a generous scoop of ice cream in the center of an upside-down cookie. 11. Gently spread the ice cream toward the edges. Top with the matching cookie and press down very gently until the ice cream reaches the edge. Avoid pressing hard enough to crack the cookies. 12. Immediately place it in the freezer. Repeat with the remaining cookies and ice cream, working in batches if necessary. Freeze for at least 3 hours before serving. Bon appétit !! 😋 #cookies #cookiedough #Recipe #baking #sweettreat
