Creamy Crockpot Chicken & Dumplings
Servings: 6
Prep Time: 15 minutes
Cook Time: 6–7 hours on LOW or 3–4 hours on HIGH, plus 45–90 minutes for dumplings
Ingredients
* 2 lbs boneless, skinless chicken breasts or thighs
* 1 medium yellow onion, diced
* 3 medium carrots, peeled and sliced
* 3 celery stalks, sliced
* 3 garlic cloves, minced
* 4 cups low-sodium chicken broth
* 1 can (10.5 oz) condensed cream of chicken soup
* 1 cup whole milk
* 2 tsp Italian seasoning
* 1 tsp kosher salt, or to taste
* ½ tsp freshly ground black pepper
* 1 can (10 oz) refrigerated buttermilk biscuits (typically 8 biscuits)
* 2 tbsp chopped fresh parsley, optional
Instructions
1. Prepare the crockpot.
Place the chicken breasts or thighs in the bottom of a 6-quart slow cooker. Add the diced onion, carrots, celery, and minced garlic.
2. Add the creamy broth.
In a bowl, whisk together the chicken broth, condensed cream of chicken soup, milk, Italian seasoning, salt, and black pepper. Pour over the chicken and vegetables.
3. Slow cook.
Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the chicken is tender and reaches an internal temperature of 165°F.
4. Shred the chicken.
Remove the chicken, shred with two forks, and return it to the crockpot. Stir gently to combine.
5. Prepare the dumplings.
Open the refrigerated biscuit dough and cut each biscuit into four equal pieces. A can containing 8 biscuits will make 32 dumpling pieces.
6. Add the dumplings.
Switch the crockpot to HIGH if necessary. Place the biscuit pieces evenly over the hot chicken mixture, pressing them lightly into the liquid. Avoid packing them tightly together.
7. Finish cooking.
Cover and cook on HIGH for approximately 45–90 minutes, depending on your slow cooker and the thickness of the biscuit pieces. Avoid lifting the lid unnecessarily. The dumplings should be puffed and completely cooked in the center, with no raw or gummy dough.
8. Serve.
Gently stir once the dumplings are cooked. Taste and adjust seasoning. Garnish with fresh parsley and serve warm.
