As a critic if you don’t understand the why of a cultures food. You are not qualified to judge it.

Her critique was beyond valid. You’re talking about being in the 1% of 1% restaurants the menu has to make sense.

I went to a three star Michelin in Paris a few years ago and honestly was so disappointed. Everything was the same level of extremely rich I just felt sick by the end

shes not critiquing a single dish, she's saying the courses could be broken up with something not acidic.

Asian food balances acid with sweeteners, salt, fish and soy brine. If acid stands out, then there’s something off. Citrus and vinegar can be great, I love black vinegar, but you have to balance it, or use it as a condiment for the meal.

I mean she did describe his Filipino food and the distinct ingredient is going to be vinegar and then she's asking why is there so much vinegar in the food maybe if he doesn't have palette

This is also why anonymous food reviews are not always helpful. Perspective, context, and history matters.

I’m not hating on this critic in particular, but I’ve never understood why they exist. I understand you need to have SOMEONE that decides if something is good or not, but the whole thing seems like such a farse. Why would they know better than someone who regularly eats the type of food in question? Someone please explain

These are the kind of food critic that annoy me and is borderline colonialist mentality. Certain cuisines are known for ingredients and baseline way of preparing food. Our cuisine has a lot of vinegar based prep because it’s a traditional and accessible way to preserve ingredients. Being an archipelago we also have access to amazing seafood so vinegar is a way to “cook” seafood without necessarily adding heat. Her saying it’s too much of that is like saying why is there too much curry in Indian food or why is there too much raw fish then goes to Japanese cuisine lol
