@kalejunkie: @kalejunkie Everything But The Turkey, Ep. 1. Recipe below for my Maple Roasted Sweet Potatoes with Lemony Whipped Feta. The sweet potatoes are perfectly caramelized with warm spices and maple syrup, then served over the creamiest lemony whipped feta and finished with all the good stuff. This is the kind of dish that’s so good, you won’t even miss the turkey :) SAVE this post, SHARE it with friends, and FOLLOW me @kalejunkie for Episode 2! Serves 8 Maple Roasted Sweet Potatoes 3 pounds sweet potatoes, peeled, cut into 1½-inch pieces 1/4 cup extra virgin olive oil 3 tb maple syrup (or honey) 1/2 tsp cinnamon 1 tsp ground ginger 1 tsp garlic powder 1/2 tsp crushed red pepper flakes 2 tsp kosher salt Lemony Whipped Feta 1 cup fat free greek yogurt 8 ounces feta cheese 1 lemon, juiced 2 tb olive oil 2 cloves garlic Garnish with: Chopped fresh parsley Honey drizzle 1/2 cup green onions, sliced 3/4 cup pomegranate arils Flaky salt Preheat oven to 400F. Peel the sweet potatoes and cut them into 1½-inch pieces and place them in a large bowl. Add the olive oil, maple syrup and seasonings. Toss to coat well. Spread the potatoes into an even layer on a large baking sheet (you may have to use two), making sure not to overcrowd them. Roast for 30 to 40 minutes, flipping halfway through, until tender on the inside with golden, caramelized edges. While the potatoes are in the oven, make the lemony whipped feta. In a blender or food processor, add the yogurt, feta, lemon juice, olive oil, and garlic. Blend/process until completely smooth and there are no clumps. Once done, spread the whipped feta onto a serving platter. Add the roasted sweet potatoes on top. Garnish with chopped fresh parsley, a drizzle of honey, green onions, pomegranate arils, and a pinch of flaky salt. This dish is meant to be served warm or room temperature. ENJOY!
