Funeral Potatoes 🥔🧀 Recipe by Sarah Gabriel | America’s Test Kitchen Creamy, cheesy shredded potatoes topped with crunchy sour cream and onion potato chips. The ultimate comfort food and a perfect holiday side dish! Ingredients * 3 tablespoons unsalted butter * 2 onions, finely chopped * ¼ cup all-purpose flour * 1½ cups chicken broth * 1 cup half-and-half * 1¾ teaspoons table salt * ½ teaspoon dried thyme * ¼ teaspoon black pepper * 2 cups shredded sharp cheddar cheese * 8 cups frozen shredded hash brown potatoes * ½ cup sour cream * 4 cups sour cream and onion potato chips, crushed Instructions 1. Preheat oven to 350°F and adjust oven rack to the middle position. 2. Melt butter in a Dutch oven over medium-high heat. Add chopped onions and cook until softened, about 5 minutes. 3. Stir in flour and cook for about 1 minute, until golden. 4. Slowly whisk in chicken broth, half-and-half, salt, thyme, and pepper. Bring to a boil. 5. Reduce heat to medium-low and simmer, stirring occasionally, until slightly thickened, about 3–5 minutes. 6. Remove from heat and whisk in shredded cheddar cheese until smooth. 7. Stir in frozen shredded hash browns and sour cream until evenly coated. 8. Transfer to a baking dish and bake until heated through. Top with crushed sour cream and onion potato chips and continue baking until golden brown. Make-ahead tip: The assembled potatoes can be refrigerated, covered, for up to 2 days. Bake covered for 20 minutes, then uncover, add the crushed chips, and bake until golden, about 45–50 minutes. Recipe credit: America’s Test Kitchen.
