Cinnamon Roll Cookies 🍪🤎 Sugar Cookie Dough • 2 cups all-purpose flour (250 g) • 1¼ tsp vanilla extract (6 g) • 1 cup granulated sugar (200 g) • 1 large egg (50 g, without shell) • 9 tbsp softened butter (128 g) • ½ tsp baking powder (2 g) • 1 tsp cornstarch (3 g) • Pinch of salt (0.5 g) Cinnamon Sugar Layer • 4 tbsp softened butter (56 g) • ½ cup brown sugar (100 g) • 1¼ tsp ground cinnamon (3 g) Frosting • ½ cup powdered sugar (60 g) • 1 tsp vanilla extract (5 g) • 2–3 tbsp heavy whipping cream (30–45 g) Instructions Cream together the softened butter and granulated sugar until light and fluffy. Mix in the egg and vanilla extract until combined. Add the flour, baking powder, cornstarch, and salt, mixing until a soft cookie dough forms. In a separate bowl, mix together the softened butter, brown sugar, and cinnamon. Roll out the cookie dough, spread the cinnamon sugar mixture evenly over the surface, and roll it up tightly. Wrap the dough and freeze for at least a couple of hours to help keep the butter cold and prevent it from melting during baking. Once chilled, slice into cookies and place on a lined baking sheet. Bake at 350 for 12-15 mins or until the edges are lightly golden and the centers are set. Allow to cool, then whisk together the powdered sugar, vanilla extract, and heavy whipping cream until smooth.
